Pimento Cheese Grilled Cheese on Sourdough Bread

Ingredients
  • 8 oz. Pepper Jack Cheese, grated
  • 8 oz. Sharp Cheddar Cheese, grated
  • ½ c. mayonnaise
  • ¾ t. Old Bay seasoning( or ½ t. red curry or your favorite)
  • 4 oz. diced pimentos, drained
  • Sourdough bread slices
Instructions
  1. Grate both cheeses at the same time using a box grater.
  2. Drain the jarred pimentos.
  3. Add the Old Bay seasoning to the mayonnaise along with the pimentos.
  4. Combine with a wooden spoon, incorporating all ingredients.
  5. Butter the sourdough bread and slather a heaping ice cream scoop of pimento cheese between the two slices of bread.
  6. Place on a griddle and cook until lightly brown and cheese has melted.
