Ingredients
  • 1 pound ground round
  • ½ c. dry Italian breadcrumbs(I used Progresso.)
  • 2 large eggs, beaten
  • 2 cloves garlic, pressed
  • ¼ c. Italian parsley, finely chopped
  • ½ t. Kosher salt
  • ½ t. black pepper
  • ¼ c. finely grated parmesan cheese
Instructions
  1. Blend all ingredients; use hands, if necessary.
  2. Form meatballs with a large ice cream scoop(3 T.).
  3. Roll between the palms of your two hands until smooth and round.
  4. Place on foil sprayed with olive oil and broil (second rack from the top) for about 6-7 minutes.
  5. Remove from pan and place in marinara sauce and simmer, covered until cooked through, about 15 more minutes.
  6. Serve over your favorite pasta.
