Serves: 2 cups
Ingredients
  • 2-4 T finely chopped red onion, your preference
  • 2 cloves of garlic, pressed
  • 1 jalapeno*, seeded, sliced into thin strips, diced (* more if desired)
  • ½ c. cilantro, loosely packed, finely chopped
  • 1 pint grape tomatoes, quartered lengthwise then sliced
  • 1 t. Kosher salt
  • 2 limes, juiced
Instructions
  1. Combine the first 4 ingredients in a glass bowl.
  2. Uniformly chop the tomatoes, conserve juice!
  3. Add salt.
  4. Squeeze limes over vegetables using a citrus press.
  5. Stir, serve and enjoy!
