Heavenly Belgian Waffles

This is the perfect weekend breakfast/brunch for family or visitors. The effort is minimal and the result is so satisfying!

Serves: 8 waffles
Ingredients
  • 1½ c. all-purpose flour ( I used White Lily brand.)
  • ½ c. cornstarch
  • 1 t. baking powder
  • ½ t. baking soda
  • 1 t. salt
  • 2 T. sugar
  • ¼ t. nutmeg
  • ½ t. cinnamon
  • 2 c. buttermilk/whole milk (I used low fat buttermilk.)
  • ⅔ c. canola oil/butter, melted (I used oil in this one.)
  • 2 large eggs, beaten
  • 2 t. vanilla
Instructions
  1. Combine dry ingredients together with a whisk.
  2. In a separate bowl, combine the wet ingredients.
  3. incorporate the wet ingredients into the dry ingredients; blend, using a whisk, until very few lumps appear.
  4. Allow to sit at room temperature for approximately 30 minutes before using.
  5. Heat waffle maker and prepare surface using manufacturer's directions.
  6. When waffle maker is preheated, pour specified amount into mold and close until it reaches your desired crispness.
  7. Keep warm in a 200 degree oven until ready to serve if they are not eaten immediately.
  8. These may be frozen and reheated in toaster oven.
  9. Enjoy with your choice of toppings: butter, maple syrup, powdered sugar, fruit compote and maybe some whipped cream to name a few....
