Queso Blanco Dip

This is a perfect dip for a casual get together or an appetizer for a game day feast for your favorite fans!

Ingredients
  • 2 T. Extra-Virgin Olive Oil
  • 2 cloves of garlic, minced
  • 1-2 jalapenos, seeded and finely diced
  • ¼ c. red onion, finely diced
  • ½ c. finely diced grape tomatoes
  • ¾ pound White American Cheese ( I used deli-sliced Land O'Lakes cut into strips.)
  • 4 oz. cream cheese or ½ c. light sour cream
  • ¾ c. half and half
  • 2 T. cilantro, finely chopped
  • ½ t. cumin
  • ¼ t. cayenne pepper
  • ½ t. Kosher salt
  • Zest(if desired) and juice from 1 lime, about 2 T.
Instructions
  1. Over medium-low heat, sauté garlic, jalapeno(s), onions for about 5 minutes or until onions are soft and translucent.
  2. Add diced tomatoes and simmer until softened.
  3. Blend in the half and half with the sour cream and stir until it begins to simmer and reaches a smooth consistency.
  4. Add the strips of cheese gradually, allowing for melting before adding additional cheese.
  5. Stir in lime juice, zest(if using), salt, spices and cilantro.
  6. Top with more cilantro or Pico de Gallo before serving.
